Pennsylvania Redbud Jelly
Redbud trees are native to our Pennsylvania woodlands. The bloom each spring with beautiful pink flowers before pushing their leave for the rest of the year until fall approaches. There is only a short window of time to collect redbud petals to make jelly. When picking, you don't want to strip the tree completely, especially because our helpful pollinators love the redbud trees too! That is why we only make a handful in the spring and once it is gone, it's gone until next year! We are very careful to only remove small amounts of the flowers from the trees, so it doesn't even look like we took any blooms by the time we are done... that way we can share with our pollinator friends!
This is a fragrant jelly... it’s sweet, with a slightly tangy taste, and it smells of spring!
